Bag of fresh Spinach
Box of Linguine
Balsamic to taste (at least a quarter cup)
Coarsely grated Parmesean to taste (at least 1/3-1/2 cup)
Pine nuts -- As many as you can afford! or about 1/3 cup If that number is zero, walnuts are a reasonable substitute, or go sans nuts. I have to say though, the pine nuts really add and element to the flavor that can't be made up for with a sub.
Cook pasta, drain, return to pot.
Stir spinach into hot pasta.
Add balsamic while stirring. Don't forget to taste as you go.
Add remaining ingredients (cheese and nuts)
Salt to taste and enjoy hot or cold. Great the next day!!!
