5-10 Kale leaves, washed and ripped from the stem
Half a bag of Salad mix
Half head lettuce, chopped
Half bunch of dill, minced
Juice from half a lemon
Tablespoon oil (olive/safflower/sunflower… any you like!)
Mix everything together, let is sit, then eat! Sooooo simple and sooooo delicious! Wonderful alone or with extras like roasted beets, cheese, sunflower seeds, or croutons.
Additionally, you can always substitute other greens. Ripped kohlrabi leaves, chard, beet greens, arugula, you name it, all of these are delicious in a salad. This recipe is just to get your mind going!
