Beets or turnips, tops removed (and saved!), scrubbed
2-3 tablespoons oil
Salt and pepper
Preheat oven to 400° F.
Rub oil over beets or turnips, add salt and pepper, and place, tops down in a pan. Place pan in oven and roast until fork easily pierces the root. About an hour.
These can be eaten as they are or in many other ways. The beets can be cooled, sliced, and added to salads, the turnips can be mashed with herbs. Too many possibilities to list! Enjoy!
Some things to remember about home farm beets:
You do not have to peel them! The skins are thin and tender, and because we use organic practices, you do not have to worry about residues.
The greens (As well as turnip greens) are edible. Saute them like chard, soften them with a vinaigrette or an oil and eat them raw, or experiment with something new. Do not let those delicious nutrients go to waste!
