½ bunch Pac Choy with stems chopped, leaves cut into 1-inch square pieces
T. Oil of your choice (I like coconut oil for now!)
1-2 cloves garlic minced
1-2 peppers chopped
At least a tablespoon of finely grated ginger
1-2 T. Soy Sauce (more if you like)
½ Jalepeno sliced and diced lenthwise(optional)
Heat oil in pan on medium to high heat. Add garlic, ginger, peppers, choy stems to pan. When the stems and peppers begin to soften add soy sauce. When it is almost done, add the Pak choy leaves and stir.
Sometimes I eat this with noodles or over rice. Sometimes, when I am feeling wild, I dice up bread and add it in with some cheese. Delicious! delicious.
