On the plus side, we do have ginger this week. Juicy and fragrant ginger. You can use it just like the ginger you are used to seeing in the store, but it is smooth and more flavorful. When you slice through a piece, there are no strings. You don’t even have to peel it. I like to add slivers raw to all kinds of things. Along with the apples we have been hauling in, this makes quite a tasty treat.
Another crop coming up to look forward too: Sweet potatoes! They survived! And we will be bringing them in just a few weeks time. In the meantime, expect to see their greens at market. You can sautee them just like spinach! They are high in vitamin K and vitamin A. Get ready to enjoy a green you didn’t even know you were missing!
